Controlled fermentation: the temperature is limited to 25 °C.

As soon as the fermentation is ended,

* The juice is separated from some marc.
* The juice stemming from every plot of land is stored in its own tank.
* The marc is very lightly pressed and puted in tanks separately.

The moment of the assembly comes then..

The grape harvest are carried in boxes (maximum 8 boxes by journey to avoid a too long wait).

Every plot of land is separately converted into wine.

The clusters are errafled then walked before being in tanks.

As possible, we leave 2 or 3 days of cold dandruff maceration before activating the fermentation
